Another favorite from last year: homemade pizza sauce

This is a modified version of a recipe I found on the internet last year. This pizza sauce is better than anything you can buy at the store.

30 large tomatoes or 60 Roma tomatoes (Roma works best because the skins are very easy to peel)
2 onions, diced
4 garlic cloves, minced.
3 tablespoons olive oil.
2 tablespoons lemon juice
2 tablespoons sugar
2 tablespoons fresh parsley, chopped, or dried parsley
1 tablespoon oregano
1 tablespoon basil
1 teaspoon celery seed
2 teaspoons salt
2 teaspoons pepper

Boil the tomatoes in a large pot, using small batches. When the peels begin to fall off, they should be removed from the water. Place in a bowl of ice water and continue to remove skins. Place tomatoes in separate bowl. When you have finished all the tomatoes, puree in food processor. Chop the onions and garlic. Put olive oil in pot and sautee onions and garlic. Add the tomatoes and the rest of the ingredients. Cook on low until mixture is reduced by half, stirring occasionally. When sauce is thick (after about 2 hours) ladle into hot pint size jars. Wipe the rims of the jars and seal. Process in a water bath canner for 25 minutes.
